Prairie Cowboy Cookies

Yippie yi yo ki yay!

I discovered my new favorite cookie! It’s part oatmeal, part chocolate chip, part magic cookie bar, part heaven.

It is slightly crunchy with the nuts, but chewy like an oatmeal cookie minus the raisins. And the chocolate chips just make it perfect. I can’t get enough… which is why I can’t make these very often. 😉

They are SO good.

What you’ll need:

1 cup flaked coconut

3/4 cup walnuts, chopped

1 cup butter, softened

3/4 cup white sugar

3/4 cup brown sugar

2 eggs

1 1/2 tsp vanilla

2 cups flour

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

2 cups quick oats

12 ounces chocolate chips

Preheat oven to 350 degrees.

Spread coconut and walnuts onto a cookie sheet.

I like to line my sheets with parchment paper… keeps them nice and clean.

Put coconut and walnuts into the preheated oven for 6 minutes, stirring/flipping every 2 minutes to toast evenly.

Kick the oven temperature up to 375 degrees.

Mix flour, baking soda, baking powder and salt in a mixing bowl.

Set aside.

In a separate bowl, cream together softened butter, white sugar and brown sugar.

Mixture should look something like this:

Add eggs, mixing one at a time.

Stir in vanilla.

Now add in flour mixture gradually… about 1/4 cup at a time.

Next, mix in the quick oats.

And then the chocolate chips.

Finally, mix in the toasted coconut and walnuts.

Mix it all up!

Place onto a lined cookie sheet (or greased) by the tablespoonful. Bake in oven set at 375 degrees for 8-9 minutes.

They will be done when they are slightly browned on top.

Yeehaw! Round up about 3 dozen of these delightful cookies! You won’t be disappointed!!
