Mini Me Crumb Top Apple Pies

I’m pretty sure adding a crumb top to apple pie is the best idea ever thought of.

The next best idea? Mini me pies.

It is the perfect individual serving…

It couldn’t possibly make hosting a dinner party any easier. Pop them in the oven while dinner is being served and in 30 minutes you have warm pie to bless your guests with. No cutting!

Just pop them out of the oven and serve! Ready? Set? Lets bake!

Start with the apple of your choice. Granny Smith apples are consistently a great apple to use… but have fun with the different varieties. You may just surprise yourself with an apple you like better than what is traditionally used. Blending different apples is also a good idea.

Peel and slice 4-5 apples.

Cut them up into bite size pieces.

Sprinkle lemon juice over the apples to prevent browning.

Add a pinch of cinnamon to the apples and mix. Set aside.

Make the crumb topping:

1 cup of brown sugar

1 cup of flour

1/4 cup of softened butter cut into small pieces

Mix together brown sugar and flour. Add butter with a fork, mixing until crumbly.

Set aside crumb mixture.

1 1/4 cups flour

1 tsp sugar

1 tsp salt

3 tbsp milk

2/3 cup vegetable oil

Mix dry ingredients together.

Add milk and oil.

Mix until dough forms a ball.

Break off balls of dough and pat into a well greased cupcake pan.

Add the bite sized apple pieces.

Cover apples with crumb topping.

Bake at 350 degrees for 25-30 minutes or until crust and topping has browned.

Nevermind what happened to those two mini me pies; it is none of your concern. Nothing to see here.

Gently remove mini me pies with a spoon or butter knife.

Could dessert get any easier or more delicious?

The answer is NO. Take my word for it.

Enjoy your mini me apple pies!
